Winter Kale + Beef Jerky Salad

Today’s lunch of jerky and kale salad is so simple and nutritious. I was crunched for time, but still wanted to fuel up on a complete meal of healthy fats, carbs, and quality protein. This way my energy is steadily sustained throughout the day without causing me to crash later - my three year old is enough of crazy around here - don’t need to add more. 😜

Ingredients:
4 cups chopped organic kale
1 chopped bell pepper
1/2 chopped cucumber
1/2 lemon, juiced
Olive oil or clean in ingredients dressing from Tessemaes
Protein, I used 2oz bag of Jerky Chews for ease and spices already in Mild flavor.
1/4 cup Sir Kensingtons mayo

Directions:
Massage kale with olive oil for 2-3 minutes. Squeeze fresh lemon. Add in cucumber, bell peppers, beef jerky. Toss to coat with mayo.

Enjoy!

Could Technology Be What Finally Lowers Healthcare Costs?

With all of the political intensity over which health care system would lower costs the most, the latest innovations in technology show the potential to drastically decrease America’s expenditures on health care.

When it comes to solving problems like obesity and diabetes, “an app or a wearable device that persuades people to walk a certain distance every day would be far cheaper for insurers and governments to provide than years of visits to doctors, hospitals and drugs.”

Because lowering levels of obesity lowers costs, investors finally see opportunities in a traditionally “over-regulated and expensive” industry.
